Sausage, Potato & Green Beans

Need to feed a table full of hearty appetites on short notice? Here is a quick and easy solution that works every time.

Serves 10


  • 5 lbs smoked, rope sausage, sliced
  • 5 lbs medium sized, potatoes
  • 6 cups cut green beans
  • 1 tsp oil
  • 2 cups of chopped onions
  • 1 garlic clove minced
  • 2 bay leaves
  • 6 cups of chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme
  • dash of cayenne pepper (adjust to taste)
  • dash of liquid smoke, to taste
  • water, as needed


  1. In a large stock pot, saute the onions in oil for 5 minutes.

  2. Add in the sausage and brown a little bit on all sides.

  3. Add the garlic and cook another minute or so.

  4. Add water, potatoes and simmer for 45 minutes to an hour (until potatoes soften).

  5. Add the rest of the ingredients and additional water if needed to cover all the ingredients.

  6. Cook, covered, for 2 and 1/2 hours, stirring occasionally.

  7. Add green beans and allow to simmer for an additional 15 to 20 minutes.

  8. Serve with crusty bread and a salad.
